Ingredients:
- Brown Rice Tortilla (Food For Life brand) – warmed in toaster oven
- Black Refried Beans (I like the ones with beans, vegetables, spices, and without oil) - spread on tortilla
- Rice or Quinoa – about 1/3 cup added on top of the beans
- Peppers (and my wife loves onions) – cooked lightly on stove with coconut oil, added on top of rice
- Salsa – homemade is preferred, although a few organic salsas out there are good, add on top of peppers
- Lettuce – any kind added on top of the salsa
- Guacamole – homemade with garlic, sea salt, pepper, and cilantro, add on top of lettuce to hold it all in.
Directions:
Grab a hold of the burrito and don’t plan to let it go. It will likely break due to the minimal processing and ingredient list of the tortilla shell. Chipotle doesn’t have anything on this burrito! Enjoy!!
