Ingredients:
- Lundberg Farms Brown Rice Pasta (spirals)
- Sun-Dried Tomatoes – dried bulk (from The Wedge), boil water, turn off heat, drop tomatoes in water, let soak for 7 minutes, strain, add little olive oil, sea salt, & garlic
- Homemade Pesto – equal amounts of walnuts and pistachios (about 1/2 cup), 1/2 cup fresh basil (packed), 3 cloves garlic, 2 tbsp olive oil, sea salt – blend in food processor until smooth.
Directions:
Mix all in warmed pan (warm pan will help break up the pesto evenly) and serve! (Chicken breast can be added for additional protein (although not many people need more protein, most need less) for more flavor.)
