(Gluten, dairy, sugar, and trans-fat free; modified from The Kid Friendly Food Allergy Cookbook)
Ingredients:
- 3 eggs
- 1 ½ tsp stevia
- 1 cup grapeseed oil
- 3 cups of brown rice flour
- 2 tsp aluminium free baking powder
- 1 tsp baking soda
- ½ tsp salt
- 1 ¼ cup brown rice milk
Directions:
Blend with a hand mixer. Line a glass (pyrex) container (we used a 9×13) with coconut oil so cake does not stick. Bake at 350 degrees for 35 minutes.
